UNC-Chapel Hill students and Latinas in the Chapel Hill-Carrboro area are invited to learn to cook a delicious holiday meal with Saludamos’s nutritional cooking classes.

Just because holidays in the United States bring to mind pumpkin pie, chocolate fudge, Christmas cookies and eggnog does not mean there is not room for do-your-body-good food. Saludamos and its friends at the Inter-Faith food shuttle in Raleigh will teach those interested how to cook a meal for their friends and family that will not only make them beg for seconds, but won’t leave them with a sugar crash or extra weight on their hips. The classes are taught in Spanish.

At 5 p.m. this Thursday, venture to the Carrboro Human Rights Center, apartment e in the Abbey Court Apartment Complex to take part in this deliciously healthy and festive activity. Classes are held weekly, but this will be the last class of the semester. Classes will tentatively start again at the regular time next semester, beginning 5 p.m. Thursday, Jan. 13. The classes are mainly for Latinas in the area, but any Spanish-speaker is welcome to join.

Those interested will also receive free nutrition lessons will be at the beginning of each class. During the Nov. 11 class, participants learned the difference between various types of wheat bread and types of grains.

Nutritionist Joy Palma and Chef Jill Perkakis from the Food-Shuttle lead the classes.

“It’s so basic and human to break bread,” Perkakis said. “Americans don’t have the same ritual around food as most countries. We tend to grab it and go.”

Saludamos Co-Director Lauren Kennedy agrees. “We want to allow people to invest time in food as a cultural and social activity. Food connects people.”

Perkakis and Palma hope not only to use these classes to teach women about nutrition, but also to encourage life-long friendships.

Friday at 4 p.m., Palma and Perkakis will bring Saludamos members to Food Lion, where put into practice their new nutritional knowledge in a “grocery store tour.” Shopping with a healthy-chef and nutritionist will allow the women to ask any questions they may have about nutritional labels or types of foods to buy. In addition, Palma and Perkakis will help the women shop on a budget.

Childcare will be provided at both the cooking classes and the grocery store tour.

*This post written by fall 2010 Marketing Interns Kaylee Baker and Megan Kennedy, who want to wish everyone a wonderful holiday season. Happy (nutritious) cooking!

Donation Cards:
This year, Sustain Foundation is making christmas gifts easy. As an alternative to buying a traditional gift, consider making a donation in the name of a friend or family member that will make a sustainable difference to a community in need. Sustain Foundation gift cards are great stocking stuffers or send your gift over email with the donation card attached!

Participate in the Sustain Foundation Donation Card Initiative by:
- Details and to Donate click here

A donation can be made to any of Sustain Foundation’s three key programs:

Saludamos: The mission of Saludamos is to improve the overall wellness and awareness of health issues among Latina participants in the Capel Hill- Carrboro area. A donation to Saludamos will ensure the sustainablity of the health education workships offered to participating women.

Sakina: Sustain Foundation has paired with Sakina, Tanzania to help fund new health initiatives and support young scholars as they continue to higher education. Money towards Sakina, Tanzania will be used for health days held in the community twice a month as well as for new resources for our secondary school “Sakina Scholars.”

Uganda: The Lost Boys of Sudan are more than 27,000 boys who were displaced or orphaned during the Second Sudanese Civil War. A donation will help Sustain Foundation raise funds for the younger sibilings of the Lost Boys of Sudan to attend schools in neighboring Uganda so they may be relieved of working in the fields of southern Sudan. These young men and women will then help rebuild souther Sudan. Every penny counts in a third world country, and an education is truly the key to a better life. The Lost Boys have a saying, “education is now my mother and father.”
